A class cooking in this magnificent area is much more than an informative course in Moroccan cuisine; it is an experience that bridges the cultural line to the Berber culture.

The journey begins with a beautiful welcome from local hosts who embody hospitality just as much as the unlimited views of their mountain village. Participants are introduced to the colourful world of Moroccan spices, herbs, and cooking traditions that have been passed down through generations. We inhale the aroma of cumin, coriander, and saffron as we gather in a rustic kitchen to embark on this journey. One of the highlights of cooking class will be the hands on experience of making a traditional tagine. As a group we will concoct a traditional tagine from the essential ingredients, stacking and piling, carnivorous lamb, colourful fresh vegetables and assorted dried fruits  which will be generously prepared by our Berber chefs who are experts in the field. As the tagine cooks over an open flame to cook the lamb fully and infuse it with the fragrant vegetables and fruits, steam starts to rise, stories of Berber traditions, beliefs, and rituals unfold. While we learned how to make the tagine, we learned how to make other Moroccan food too, like fluffy couscous, or savoury salads with locally grown fruits, and vegetables. Each morsel we simply put together with pride is contradictory to the simple excellence of mountain food, they are only ingredients, whether they were found at a farmer’s market or wild in the mountains, all the ingredients will be appreciated and respected. For our cooking class wrap up we completed As participants wave goodbye to their host and descend from the mountains they will leave with more than just new recipes in their suitcase. They will also take home memories of the laughter they shared while stirring pots, new friends made in a foreign country, and a deeper respect for the rich culinary tradition of the Atlas Mountains of Morocco.
